Fruit has a season. Not a marketing season, an actual one, where a thing is everywhere and cheap and tastes like itself, and then it is not.
A shop can respond to that or ignore it. Ignoring it looks tidier: the same board all year, the same twelve drinks, nothing to explain to anybody.
It also means buying whatever is out of season at the worst price of the year, in the worst condition of the year, and putting it in a cup anyway. The customer pays for both.
So our board will move. Some drinks will be there every single day because they always work. Others will come when the fruit is good and go when it stops being good, and we will say so rather than quietly swapping in something lesser under the same name.
Two things this does not mean.
It does not mean the menu is unreliable. Anything we put up we can make, and if it is on the board today it is because it is good today.
And it does not mean chasing the unusual for its own sake. A rare fruit nobody enjoys drinking is still a drink nobody finishes, and that is the first question we ask about anything.
If your favourite disappears for a while, ask. It usually means it is out of season, and it usually means it is coming back.
